We have produced quite a few vintage style cakes this year. Not just for weddings, but for birthday parties too. When we make a piped cake, we use the traditional skill of royal icing (rather than buttercream) Royal icing has a much more professional finish and also won’t melt on a warm day!
At Hall of Cakes we have a combined experience in sugar craft of over 50 years. So, between the team there really isn’t a piping nozzle or tube that we haven’t used. So many swirls, shells and garlands!
We love that the traditional vintage styles of piping are back in fashion again. So many styles come and go over the years but traditional always seems to come back time and time again. We love it.
Vintage piped cakes are sometimes called ‘overpiped cakes’ or Lambeth cakes. Overpiped is self explanatory but not many people know where the term Lambeth comes from. Basically, a man called Joseph Lambeth produced a book on the technique in the mid 20th century and it has stuck since then. The book was called The Lambeth Method of Cake Decoration & Practical Pastries. It came out in 1934 so, this style has been en vogue for nearly 100 years. Probably the best exactly of the Lambeth Cake is the first image here which was delivered to The Belvedere at Holland Park last week
We have also included here a few slightly different styles of piped cakes. Some are slightly more Victorian in style but all show the different techniques in piping and how beautiful they look on a tiered cake. The secret to making these cakes look absolutely perfect is planning. It’s not just a case of applying the piping! Careful planning and measuring is the only way to achieve a perfect professional result.
